Spring Hill Food Trucks at The Peanut Gallery in Aubrey, Texas

When the world shut down during the pandemic, most people paused. But for one North Texas entrepreneur, that pause became the spark of an unexpected calling. What began as a few small, hands-on jobs quickly grew into a thriving food truck now known as Tropical Sweets by Alexis. A business rooted in passion, culture, and community.

“I never imagined it would become something this big,” he says with both gratitude and disbelief. After working at Michael’s and juggling multiple jobs to stay afloat, he discovered a gift for creating decadent pastries and amazing food.  His early clients saw the heart he put into his work and word spread fast.

Today, families from Houston, San Antonio, Fort Worth, and Dallas travel to enjoy the work of his hands. His style carries a joyful blend of Puerto Rican, Mexican, and Spanish influences. “People love our flavors and our way of celebrating,” he shares. “It reminds them of home.”

Despite long days that often begin at 5 a.m., he says the work never feels heavy. “It’s love, energy, and vision,” he explains. “Seeing families enjoying themselves, seeing the kids smile, that’s everything.”

In communities like Aubrey, where many cultures blend but Puerto Rican traditions are rare, he has become a bridge, bringing island vibrancy to local celebrations.

His story is a reminder that purpose often reveals itself in unexpected seasons and that with faith, passion, and perseverance, even a moment born in struggle can grow into something beautiful.

Alexis is part of the Springhill Food Trucks at The Peanut Gallery located at 558 Spring Hill Rd, Aubrey, TX (right next to the new Aubrey High School) where other food trucks also share their talents with the local community.   They also host events throughout the year.
