At just 25 years old, Diego Puga is proving that ambition, culture, and creativity can reshape an entire dining scene. As the visionary behind Papa D’s in Sanger, he represents the new wave of young entrepreneurs who are raising the bar for North Texas cuisine one bold flavor at a time.

“I recognize North Texas is growing,” Diego says, “and the community deserves a dining experience that blends culture, creativity, and quality.” With that insight, he set out to build something the area has never seen before: a modern take on Mexican fusion, the kind you would expect to find in Austin, Dallas, or even beyond.

What makes Papa D’s distinctly his is the intention behind every detail. “From the menu to the cocktails to the atmosphere, every detail reflects the vision and high standards I set from day one,” he explains. “Papa D’s isn’t just a restaurant; it’s a representation of what I believe great hospitality should feel like.”

Diego draws inspiration from everywhere; his roots, his travels, and his guests. “I pull from the flavors I grew up with, the trends I see when I travel, and the feedback I get from guests,” he says. His goal is to elevate something familiar into something memorable, and it shows in every plate and every pour.

But launching a restaurant at his age hasn’t been without challenges. “The biggest lesson has been the power of resilience,” he reflects. “At a young age, you face even more pressure because you’re learning while leading.” Setbacks only sharpened his determination: “Resilience is what built this place.”

What he hopes guests take away is simple yet powerful. “I want them to remember the overall experience… and leave saying they’ve found a new favorite spot.”

In just months, Diego Puga hasn’t just opened a restaurant, he’s

created a destination. And for North Texas, Papa D’s is only the beginning.

You can try some of the menu favorites like the Chili Renello de Mar made with a crab, shrimp, & calabaza sauce and you have to leave room for the desert!  Their Gansito Cake is unlike anything you have ever had.  The berries are marinated to perfection and the homemade ice-cream will leave you wanting more!
